The Power Of Our Agricultural History. This section looks to understand why the western Catskills produced the crops and raised the livestock it did, based on the farming backgrounds of the settler who came here. It also looks at the wild foraged foods – from hunting to fishing to foraging – and what it tells us of the native species the land here supports. You’ll find out surprising things – like what legendary Catskill recreational activity and food delicacy is based on an fish that was brought in to our streams. Oops – hope we didn’t give that one away.
We will share with you stories on some of the new generation of farmers, and how they are tackling things from hard economic times in the dairy industry to organic and sustainable farming practices. We’ll highlight new products that are being brought to market – still thanks to our close proximity to New York City and its consumers. Pretty powerful stuff.
